Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
- 1/4 cup coconut sugar
- 2 tbsp ghee or clarified butter
Instructions:
Set the oven temperature to 175C 350F
Almond flour, coconut flour, baking powder, and salt should all be combined in a big bowl
Whisk eggs, melted coconut oil, maple syrup, and vanilla extract in a separate bowl
Mixing until a dough forms, pour the wet ingredients into the dry ingredients
Using two pieces of parchment paper, roll out the dough to form a rectangle that is 1/4 inch thick
Combine the coconut sugar and ground cinnamon in a small bowl
The rolled-out dough should be covered with ghee or clarified butter, and then equally sprinkled with the cinnamon-sugar mixture
With the help of the parchment paper, carefully roll the dough into a log
Roll the log into 1-inch-thick rolls and put them in a baking dish that has been oiled
Bake for 20 to 25 minutes, or until the rolls are golden brown, in a preheated oven
Before serving, let the cinnamon rolls cool slightly
