Flavorful bell peppers and onions are stuffed into tender flank steak, which is then spiced and baked until it's done. With a squeeze of fresh lime juice and cilantro on top, these roll-ups are a tasty take on traditional fajitas.
Ingredients:
- 1 lb flank steak, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
Instructions:
Preheat the oven to 375F 190C
In a large bowl, combine sliced flank steak, bell peppers, onion, garlic, olive oil, chili powder, cumin, paprika, salt, and pepper
Toss until well coated
Lay out the steak slices and place a portion of the vegetable mixture on each slice
Roll up tightly and secure with toothpicks
Place the roll-ups in a baking dish and bake for 20-25 minutes, or until steak is cooked to desired doneness
Remove from the oven and sprinkle with chopped cilantro and lime juice before serving
