Roasted Pepper, Nectarine, and Ricotta Grilled Pizzas



These pizzas cooked on a grill have a unique and tasty mix of flavors. The sweet nectarines go well with the smoky roasted peppers, and the creamy ricotta cheese keeps everything in check. It tastes great and is great for the summer!

Ingredients:

  • 4 small pizza crusts
  • 1 cup ricotta cheese
  • 2 red bell peppers, roasted and sliced
  • 2 nectarines, sliced
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Preheat your grill to medium-high heat

Brush each pizza crust with olive oil on one side

Spread a generous layer of ricotta cheese on the oiled side of each crust

Evenly distribute the roasted pepper slices and nectarine slices over the ricotta cheese

Sprinkle shredded mozzarella cheese on top of the toppings

Place the pizzas on the grill, oiled side down, and cover with the grill lid

Grill for about 5-7 minutes or until the crust is crispy and the cheese is melted and bubbly

Remove the pizzas from the grill and sprinkle torn basil leaves on top

Season with salt and pepper to taste

Slice and serve hot
