Fresh Veggie Spring Rolls More More



These fresh vegetable spring rolls are full of bright flavors and colors, making them a great snack or light meal. They are healthy and filling because they are full of crunchy vegetables and herbs. They're also fun to make and even more fun to eat!

Ingredients:

  • 8 rice paper wrappers
  • 2 cups shredded lettuce
  • 1 cup shredded carrots
  • 1 cucumber, julienned
  • 1 bell pepper, thinly sliced
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup roasted peanuts, chopped
  • 1 avocado, sliced

Instructions:

Spread warm water out in a small dish

For about 5 to 10 seconds, dip one rice paper wrapper into the water until it softens

On a clean surface, put the softened wrapper

Put avocado, bell pepper, lettuce, carrots, mint, cilantro, peanuts, and bell pepper in the middle of the wrapper

Fold the sides of the wrapper over the filling, and then roll it up tight from the bottom to cover it all

Do it again with the rest of the ingredients

Put it out right away with your favorite sauce for dipping
