This simple enchilada recipe for the slow cooker is full of flavor and great for a cozy dinner. Because the enchiladas are cooked slowly, the flavors can blend together, making them tender and tasty.
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz corn kernels, drained
- 1 can 15 oz diced tomatoes
- 1 can 10 oz enchilada sauce
- 2 cups shredded Mexican cheese blend
- 1/4 cup chopped cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 10 corn tortillas
Instructions:
Mix ground beef and onion in a pan and cook until the beef is browned and the onion is clear
Add the corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper, and mix them in
Bring it to a boil
Pour some of the beef mixture into the slow cooker's bottom
Add corn tortillas, tearing them if needed to make them fit
Add cheese and cilantro on top
Put more layers on top, ending with a layer of cheese and cilantro
Put the lid on top and set the heat to low
