This Cajun Shrimp Salad has just the right amount of spicy Cajun flavors and crisp, fresh vegetables. This meal is very quick and easy to make. It's very tasty and can be eaten for lunch or dinner.
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 tbsp Cajun seasoning
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cucumber, sliced
- 1/4 cup sliced black olives
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
In a bowl, toss the shrimp with Cajun seasoning and a drizzle of olive oil
Spread the seasoned shrimp on a sheet pan in a single layer
Roast in the oven for 8-10 minutes or until the shrimp are pink and cooked through
In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, cucumber, olives, and feta cheese
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing
Drizzle the dressing over the salad and toss to combine
Top the salad with the Cajun roasted shrimp
Serve immediately and enjoy!
