Ingredients:
- 1 cup apple, finely grated
- 1 cup peanut butter
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine the grated apple, peanut butter, brown sugar, egg, and vanilla extract
Mix until well combined
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms
Scoop tablespoon-sized portions of dough and roll them into balls
Place the dough balls on the prepared baking sheet, leaving some space between them
Use a fork to gently flatten each dough ball and create a crisscross pattern on top
Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
