5-Min Vegan Breakfast Muffins



Quick and easy vegan muffins perfect for a nutritious breakfast on busy mornings.

Ingredients:

  • 1 cup flour
  • 1/4 cup oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup non-dairy milk
  • 2 tbsp maple syrup
  • 2 tbsp vegetable oil
  • 1/2 tsp vanilla extract
  • 1/2 cup mashed banana
  • 1/4 cup chopped nuts or seeds optional

Instructions:

Preheat oven to 375F 190C

In a bowl, combine flour, oats, baking powder, baking soda, and salt

In another bowl, whisk together non-dairy milk, maple syrup, vegetable oil, and vanilla extract

Add mashed banana to the wet mixture and stir to combine

Pour wet ingredients into dry ingredients and mix until just combined

Fold in chopped nuts or seeds if using

Divide batter into muffin tin lined with paper liners

Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean

Allow muffins to cool slightly before serving
